In this article from my 13-Week Project, I would love to share one of my absolute favourite family baking recipes: a German pudding-filled streusel sheet cake (Gefüllter Streuselkuchen). This cake tastes incredible – creamy in the middle with a tender base and golden, buttery crumbles on top. I wish everyone who tries this recipe lots of fun baking and enjoying it!

Ingredients for the Pastry Base

  • 500 g all-purpose flour
  • 120 g sugar
  • 1 packet vanilla sugar (or 1 tsp vanilla extract)
  • 1 packet baking powder (approx. 15 g)
  • 2–3 eggs
  • 2–3 tbsp milk
  • 175 g margarine or softened butter
  • 1 pinch of salt

Knead these ingredients into a smooth dough and press it evenly onto a greased baking sheet. Next, spread 600 g of prepared vanilla pudding smoothly across the dough base.

Ingredients for the Butter Streusel

  • 300 g all-purpose flour
  • 300 g sugar
  • 300 g butter

Preparation & Baking

Rub the streusel ingredients together with your hands until lovely crumbles form, then scatter them generously over the vanilla pudding layer. If you like, you can make a two-tone streusel cake by mixing cocoa powder into half of the crumble dough – or add about 50 g of unsweetened cocoa powder to turn all of the crumbles into rich chocolate streusel.

Bake the cake for about 30 minutes at 200 °C (390 °F) in a preheated oven until the streusel topping turns golden brown. Once cooled, dust lightly with powdered sugar before serving.

  3. Make the streusel: Crumble flour, sugar, and butter with your fingertips (optionally adding cocoa) and scatter over the pudding.
